INGREDIENTS

Wet Binders & Sweetener

  • 2 large Eggs (Vegan Option: 2 flax/chia "eggs": 4 tsp ground flaxseed, 2 tsp ground chia seed, mixed with 1/4 cup + 2 tbsp water, rested 5 - 10 minutes - this does an amazingly good job at replacing egg as a binder)

  • 3 tbsp Pure Monk Fruit Maple Syrup (or substitute regular maple syrup, but it will increase the glycemic load slightly.)

  • 2 tbsp Extra Virgin Coconut Oil, melted

  • 1 tsp Pure Vanilla Extract


Structural Fiber & Seasoning

  • 1 tbsp Ground Chia Seeds or Ground Flaxseed (gel binder)

  • ½ tsp Ground Cinnamon

  • ¼ tsp Fine Sea Salt


Seed & Coconut Base

  • ½ cup Raw Pumpkin Seeds (Pepitas), coarsely chopped

  • ⅓ cup Raw Sunflower Seeds

  • 3 tbsp Raw Sesame Seeds or Hemp Hearts

  • ½ cup Unsweetened Coconut Flakes, lightly toasted

  • ½ cup Unsweetened Coconut, finely shredded

  • Experiment with different combinations of chopped nuts and seeds as you desire.


Functional Mix-ins

  • ⅓ cup total of chopped dried fruit of your choice. Consider unsweetened dried tart cherries, raisins, wild blueberries. For the cleanest bars be sure the dried fruit is unsulfured.

  • ¼ cup 100% Pure Cacao Nibs or Sugar-Free Dark Chocolate Chips. I like Just Dates brand date sweetened chocolate chips. But you can use whatever chocolate chips you prefer, although it may change the amount of sugar in each bar.


INSTRUCTIONS


  1. Equipment & Oven Prep: Preheat your oven to 350°F (175°C). Place your silicone bar mold tray onto a solid metal baking sheet to ensure structural stability and even heat distribution across all cavities.

  2. Toast Coconut: In a dry skillet over medium-low heat, gently toast the coconut flakes for 3 to 4 minutes until lightly golden brown and aromatic. Set aside to cool.

  3. Whisk Emulsified Binders: In a bowl, thoroughly whisk together the eggs (or flax eggs), monk fruit syrup, melted coconut oil, ground chia/flaxseed, vanilla extract, cinnamon, and fine sea salt until smooth and uniform. Let rest for 3 minutes to allow the mucilaginous fiber to begin gelling.

  4. Integrate Dry Ingredients: Fold in the coarsely chopped pumpkin seeds, sunflower seeds, sesame seeds, toasted coconut flakes, finely shredded coconut, chopped dried berries, and cacao nibs. Mix continuously until every seed is completely coated in the egg-chia viscous binder.

  5. Pack the Molds (Crucial Technique): I like to use bar molds. These 8-bar silicone molds (affiliate link) are super easy to use. Spoon the dough evenly into individual bar cavities. Using the back of a spoon or a piece of parchment paper, press down with firm pressure to compact the seed mixture. Tight compaction eliminates internal air pockets, preventing crumbling after baking. You could also bake them in a glass baking dish and cut them when they're still warm.

  6. Silicone Bake: Transfer to the center oven rack and bake for 20 to 22 minutes. Because silicone insulates heat more than metal, look for deep golden-brown edges and a firm, matte center top. Cooking times and temperatures vary with different ovens and different baking dishes.

  7. Thermal Setting Process: Remove from the oven and let the bars cool completely inside the mold at room temperature for 30 minutes. Transfer the entire silicone tray to the refrigerator for 20 minutes to solidify the healthy fats before gently popping each bar out of its mold.


Pro Tips

  • Firm Compaction is Key: Silicone molds are non-stick, but because there are no gluten or refined sugars to melt into a glue, mechanical pressure when packing the molds is what holds these bars together. Don't be afraid to press down hard!

  • The Chill Step is Non-Negotiable: Coconut oil melts at warm temperatures and firms up when cold. Refrigerating the mold for 20 minutes before removal ensures the healthy fats solidify, preventing breakage.

  • Storage Strategy: Store in an airtight glass container in the refrigerator for up to 12 days, or freeze individually wrapped bars for up to 3 months for a quick grab-and-go nutrient boost.
